Chilli Char Chicken

What You Need

Ingredients

500 g boneless chicken, cut into small pieces
1/2 cup thick yogurt
1 tbsp ginger-garlic paste
1 tbsp lemon juice
1 tbsp Kashmiri red chilli powder
1 tsp red chilli powder
1 tsp garam masala
1 tsp cumin powder
1/2 tsp turmeric powder
1/2 tsp black pepper powder
1 tbsp corn flour
1 tbsp rice flour
1 tbsp gram flour
1 tbsp cooking oil
1 tsp salt
10 curry leaves
2 green chillies, sliced
1 tbsp fresh coriander, chopped

Instructions

1. Pat the chicken pieces dry and place them in a mixing bowl.

2. Add yogurt, ginger-garlic paste, lemon juice, Kashmiri red chilli powder, red chilli powder, garam masala, cumin powder, turmeric, black pepper and salt.

3. Add corn flour, rice flour and gram flour and mix well until the chicken is evenly coated.

4. Cover and marinate for at least 30 minutes. For a richer flavour, refrigerate for 2–4 hours.

5. Preheat the Domestica Air Fryer Oven to 200°C for 2–3 minutes.

6. Lightly brush or spray the cooking tray with oil.

7. Arrange the chicken pieces in a single layer, leaving space between each piece.

8. Air fry at 200°C for 12–15 minutes.

9. Turn the chicken pieces halfway through cooking for even browning.

10. Add curry leaves and sliced green chillies during the final 2–3 minutes of cooking.

11. Continue cooking until the chicken develops a crisp golden coating and lightly charred edges.

12. Garnish with fresh coriander and serve hot with lemon wedges.

Pat the chicken dry before marinating to help create a crispier coating.

Do not overcrowd the tray. Proper spacing allows hot air to circulate evenly.

Lightly spray the chicken with oil before cooking for better browning.

For a stronger charred finish, cook for an additional 1–2 minutes at 200°C while watching closely.
